Les Salines is a cuvée produced in collaboration with Eric Pfifferling , from Domaine de l'Anglore located in the Rhône valley, in Tavel . This natural rosé wine is made from Carignan from three different clos, on vines planted in 1948, 1963 and 1966 . The grapes are harvested manually and sorting is carried out in the plot then in the cellar. The harvest is put in the refrigerator overnight then placed in vats by gravity. It macerates for another night then is devatted, by gravity, the next day. The pressing and flow of the juice is done in old barrels over 10 years old. The wine is aged in barrels until the new moon of Mars.
