Domaine des Ardoisières - White Schist 2023
Domaine des Ardoisières is located in Savoie on the Coteaux de Cevins and Saint-Pierre-de-Soucy . The estate was founded in 1997 following the replanting project of the fallow vineyard of Denis Perroux , the mayor of the village. This project came to fruition in 1998 with the first planting of the local grape variety called Altesse and the first harvest took place in October 2002. A few months later, Denis Perroux met Brice Omont (a winemaker passionate about biodynamics) and Michel Gisard (an agricultural engineer from Champagne). Since 2008, they have been at the head of Domaine des Ardoisières which now covers 16 hectares. The estate is managed using biodynamic methods .
The Schiste Blanc cuvée is a blend of Jacquère (40%), Roussanne (30%), Malvoisie (20%) and Mondeuse Blanche (10%) . The vines are grown on terraces and exposed to the South and South-East on a schistose and silty soil, poor and shallow. The grapes are harvested manually according to the maturity of each grape variety. Each grape variety is vinified separately and then fermentation is carried out with indigenous yeasts. The aging lasts 12 months in barrels .
