Pajzos Castle - Harslevelu Late Harvest - Sweet 2021
Château Pajzos is located in Sarospatak, in the Tokaj region of Hungary . It was established in 1991 when Jean-Michael Arcaute and Jean-Louis Laborde launched the “Renaissance de Tokaji”. They led a group of 12 wine enthusiasts and acquired Château Pajzos, carrying out the first harvest and vinification as a “private enterprise” that same year. The Château also purchased the Megyer winery in late 1999 and draws on these vineyards for the production of some of their wines. Today, the 100-hectare estate (including 55 hectares of vines) is the exclusive property of the Laborde family, who also own Château Clinet in Pomerol.
Tokaj Late Harvest H is made from Hárslevelű harvested from late October to mid-November (late harvest). The whole bunches of ripe berries were pressed whole and aged for 6 months in stainless steel tanks .
