Hervé Villemade presents his 2016 Cheverny red to us. Grape varieties: 60% Pinot Noir and 40% Gamay, from several plots between 9 and 38 years old. Clayey-sandy soil and flint.
Domain certified in organic farming, practice of weeding. Manual harvest, sorting of the grapes in the vines and controlled yield: 25 hl / ha. Vinification: whole harvest, 15-day maceration, low-temperature fermentation, indigenous yeasts, no chaptalization, no sulfur. Aging 6 months in wooden vats, bottled with 1 to 1.5 g of sulfur in February 2018.
All the bottles displayed in our website are stocked in our cellar in Bordeaux.
