Domaine Pascal Cotat - Chavignol Rosé
Pascal Cotat is a winemaker located in the commune of Chavignol, within the Sancerre appellation in the Loire Valley. The Cotat family has been renowned in the region since the 1940s and his cousin François Cotat also produces wine in Sancerre. Pascal Cotat owns 2.5 hectares of vines: 0.1 hectares of Pinot Noir and 2.4 hectares of Sauvignon Blanc with an average age of 40 years. He runs his vineyard according to the principles of organic farming, not certified.
Pascal Cotat's non-vintage Rosé is a micro-production from the 0.1 hectares planted with Pinot Noir. The grapes are harvested at maturity in order to obtain a powerful texture and high complexity. Vinification takes place with indigenous yeasts before fermentation in old demi-muids. The wine is bottled without fining or filtration. It has great aging potential.
