Domaine BELLUARD - Grandes Jorasses - Altesse 2018
Domaine Belluard is located in the commune of Ayse, in Savoie. The estate was established in 1947 and was once covered with fruit trees. Since 1988, Dominique Belluard has been in charge of the 10 hectares that he planted mainly with the endemic Savoie grape variety called "Gringet". The vineyard has been managed in biodynamic agriculture since 2001, without official certification. The observation and the permanent analysis of the vineyard lead to a conduct of protection and care of the plants by integrating all the surrounding natural elements, always in search of the balance between the plant, animal and mineral world to the detriment of the pesticides of chemistry.
Grandes Jorasses is made entirely from Altesse (also known as Roussette de Savoie) whose average age is 15 years. After the manual harvest, the vinification is traditional without yeasting and the fermentation lasts more than 4 months. Malolactic fermentation occurs spontaneously. The wine is coarsely filtered on white earth before bottling. "Les Grandes Jorasses" refers to the legendary race of the Mont-Blanc Massif.
