Champagne Salon - Blanc de Blancs - 2007
Salon is one of the most prestigious Champagne Houses. It was founded in 1911 by Eugène-Aimé Salon who initially created this Champagne for his personal pleasure only. Instead of making a range of different styles like most Champagne Houses, Salon makes a single prestigious cuvée, made entirely from Chardonnay from the village of Mesnil-sur-Oger. The first vintage of Champagne Salon dates from 1905 but it was not until the 1920s that he shared his creation with the rest of the world. Champagne Salon comes from a one-hectare plot called "Le Jardin Salon" and 19 smaller plots cultivated in agreement with different winegrowers of the Grand Cru Le Mesnil. The wines are aged in the cellar for an average of 10 years, after which they finally begin to reveal their complexity and finesse. The fact that Salon still keeps bottles of almost all vintages in its cellars is a testament to its heritage and pays homage to it: only 37 vintages were produced in the 20th century, a unique phenomenon in the world of wine. In years deemed insufficient, the grapes are part of Champagne Delamotte. Today, Champagne Salon, alongside Champagne Delamotte, are managed by Didier Depond (Chairman) and Michel Fauconnet, Cellar Master and Production Director of the Laurent-Perrier group.
