Domaine de Bellevues - David Ramnoux - Cognac - 40%
Domaine de Bellevues is located in Mareuil, in Charente. It has been operated by David Ramnoux and his wife since 1997. They cultivate 8.5 hectares biodynamically and produce Pineau des Charentes, Cognac as well as a red wine classified as a Vin de Pays Charentais.
This Cognac is obtained by distilling white wine made with Ugni Blanc and Colombard grape varieties. Once picked, the grapes are pressed and the juice obtained ferments naturally for 10 days. The wine is kept on lees for 1 to 2 months before distillation. The lees are resuspended to be distilled with the wine. The distillation is carried out during the winter in the family still of 4.5 hectoliters. This traditional Charentais still has been installed on the estate for three generations. After 2 to 3 months of daily work, the cognac eau-de-vie is created and then undergoes a long aging of 8 years in Limousin oak barrels.
