SAUTA ROC - Peira Levada 2018
Domaine Sauta Roc is located in Vailhan, in the Languedoc. The 9-hectare vineyard was taken over in 2016 by Bertrand Quesne and Laura Borrelli, coming from Tuscany, Italy. They work the estate in organic farming.
Peira Levada is a blend of Vermentino (50%) and Roussanne (50%). After the manual harvests, the grapes are put in direct pressing separately. The fermentation of each grape variety takes place with indigenous yeasts in stainless steel vats, with stirring at the end of fermentation. The wines do not undergo malolactic conversion and are blended in winter.
