Binaume - Claire Naudin - The Plant Next Door 2021
Domaine Naudin-Ferrand is located in Magny-les-Villers, in the Côte de Nuits in Burgundy . Claire Naudin took over the estate in 1994. A follower of sustainable viticulture and integrated production, she refuses standardization and prefers an artisanal approach to sustainable viticulture, with minimal interventionism but without certification for organic or biodynamic agriculture. The estate covers approximately 22 hectares of vines, with a few crus such as Echezeaux, Aloxe, Ladoix, Nuit-Saint-Georges and the rest in regional appellations.
Following the 2016 frost, the original “Plante” cuvée was completely destroyed. Claire Naudin therefore created her trading activity BiNaume to vinify in Burgundy grapes from another region. Thus, La Plante d'à Côté is a cuvée made from Pinot Noir , 30% of which comes from mass selection and whose vines were planted in 2013, 200 km west of Beaune. The harvest is manual, in small crates to avoid crushing the grapes, then transported in refrigerated trucks to Magny-les-Villers where they are put into vats without adding sulphites. The alcoholic fermentation takes place in concrete vats, with a minimum of extraction and pressing before the end of the alcoholic fermentation to favor the fruit and limit the extraction of tannins.
