Domaine de la Tournelle - Fleur de Savagnin 2019
The Domaine de la Tournelle is located in Arbois , in the Jura . The estate was created in 1991 by Pascal and Evelyne Clairet , both trained oenologists and nature enthusiasts. They now operate 8 hectares of vines, cultivated and certified organic . They are among the pioneers of natural wine with minimal or even no sulfur intervention. They raise their wines in barrels in a Cistercian cellar that they have restored in Arbois.
Fleur de Savagnin is made from Savagnin grown on gray marl and harvested manually in whole bunches . The pressing is gentle followed by static settling for 12 hours. The beginning of the alcoholic fermentation occurs in vats , and the second part in barrels of 228 liters . The malolactic fermentation takes place in barrels, the following spring, with topping up every 10 days without adding sulphur. The wine is aged in wood, without new barrels, on fine lees and ouille for 24 months .
