The Aven of the Nymphs - Richard Lavanoux - Pic Saint Loup 2020
The Aven des Nymphes is located in the medieval village of Matelles, in the Pic-Saint-Loup appellation in Languedoc . The 4-hectare family estate has been run by winemaker Richard Lavanoux since 2017, and the first vintage was marketed in 2019. The vines are grown on a clay-limestone terroir formed from sedimentary rocks, rich in stones and clays. Since 2018, the vineyard is being converted to organic farming .
This wine is a blend of Syrah (90%) and Grenache (10%) harvested in two stages to obtain different maturities. Part of the harvest is vinified in whole bunches. The aging lasts 12 months in vats and in French oak demi-muid (for 15%).
