Champagne Jean Servagnat - The Galipes of Coulommes
Domaine Jean Servagnat is located in Coulommes-la-Montagne, in the Montagne de Reims in Champagne . Jean Servagnat comes from a long-standing Champagne family. Each plot has an average size of 60 ares, distributed in different places on the hillside. The conduct of the vineyard is inspired by the functioning of nature, with respect for biodiversity . No insecticides or herbicides are used. In the winery, he seeks to manipulate the wines as little as possible, so that they restore the specific characteristics of the terroir.
Les Galipes de Coulommes is a blend of Meunier (65%), Chardonnay (25%) and Pinot Noir (10%) mainly from the 2018 vintage with 40% reserve wines. Alcoholic fermentation takes place in stainless steel vats with indigenous yeasts and malolactic fermentation is encouraged. The wine is bottled with an Extra-Brut dosage of 1.7 g/L .
