Domaine Philippe Valette - Pouilly Fuissé - Le Clos Reyssié
Domaine Philippe Valette is located in the village of Chaintré, in the Mâconnais in Burgundy . From 1990, the couple Philippe and Cécile Valette decided to cultivate their 15 hectares of vines in organic farming , with the principles of biodynamics from 1992 but without certification . Patience is their philosophy: they harvest the grapes at optimum maturity, even if it means reducing yields, and favor long aging in barrels.
Le Clos Reyssié is a 1.5 hectare vineyard located on a hillside facing south-east, benefiting from clay-limestone soil and a hot, dry climate. The grapes are harvested by hand and vinified in French oak barrels. The juices have benefited from an extremely long ageing , with a duration of up to nearly 10 years, on fine lees in oak barrels that have contained between 3 and 5 different wines, before being transferred to vats. It is a blend of grapes harvested in 2012, 2013 and 2014 , completed with a barrel from 2016 and another from 2018 .
