Domaine de Vaccelli - Sirocco White 2017
The history of Domaine de Vaccelli began in 1962, when the Courrèges family settled on the granite hills of Cognocoli-Monticchi, in the Taravo Valley, south of the Ajaccio appellation. Today, the average age of vines is above 30 years, yields are limited to about 30 to 40 hl / ha and less than 7,000 crates are produced each year. In the cellar, only the indigenous yeast is used during the vinification and the wines are never filtered.
Sirocco is 100% Vermentinu, which is fermented in stainless steel (stainless steel) tanks with native yeasts. The wine is then aged for 11 months on its fine lees in half-barrels of 600L. The wine is brought back into the stainless steel tank for a month before bottling.
All the bottles displayed in our website are stocked in our cellar in Bordeaux.
